What is the story behind Meredith Masony's Easter tradition at Waffle House?

From what I can gather, my family and I started going to Waffle House for breakfast on Easter a couple of years ago. It seems to have become a tradition for us. There's no specific story behind it, but it's a fun and delicious way to start our Easter celebrations. It's always a joy to spend quality time with family over good food.
