- Start with chicken breasts or tenders in a casserole dish; salt and pepper both sides. You can pre-bake a bit, but you don’t have to.
- In a bowl, mix quartered grape tomatoes, olive oil, lots of minced garlic, dried basil, oregano, and salt (be generous, especially if using fresh mozzarella).
- Spoon the tomato mixture over the raw (or partially cooked) chicken.
- Top with sliced fresh mozzarella (I buy the pre-sliced log from Costco).
- Bake at 350–400°F until the chicken is cooked through (165°F in the thickest part) and the cheese is melted and bubbly.
I like to serve it over rice, pasta, or greens and spoon the extra tomato “sauce” over the top.
