I focus on two main latte art techniques when I order (and photograph) drinks at Urth Caffé:

• Free-pouring: The barista pours steamed milk directly into the espresso to “draw” designs like the swan on my organic café latte and the lotus leaf on my Italian cappuccino in Beverly Hills.
• Layer control: They carefully control crema and microfoam so the contrast is sharp and the shapes look like real artwork.
