When I bake cookies the “Janis way,” I focus on controlling spread and improving texture, especially for cutout and holiday cookies.
From my posts, you can see I chill cutout cookies for about 15 minutes before baking. The chilled dough holds its shape much better, so trees, stars, and gingerbread people come out crisp and defined instead of puffy and blurred. I’ve shown side‑by‑side photos where a chilled cookie keeps its sharp edges and an unchilled one spreads noticeably.
I also like to bake certain cookies, like gingerbread, ahead of time and let them age in an airtight tin. The flavor deepens and the texture improves, which many “bake-and-serve-right-away” methods skip.
