What gear and tools does Hilary Erickson recommend for home baking enthusiasts?

From what I share on my baking posts and podcast, here are the main tools I really recommend for home bakers:

• A good stand mixer – I’ve used KitchenAid, but I currently love the Bosch Universal Plus (or the more affordable Artiste). Bosch is amazing for big batches and adds great airiness.
• Cookie paddles and a bowl scraper attachment – these make cookie dough mixing easier and mean less stopping to scrape the bowl.
• A sideswipe-style blade for KitchenAid – great for cakes and thinner batters.
• Silicone cookie sheet liners and large jelly roll pans – for even baking and easier cleanup.
• A sturdy cookie scoop – for uniform cookies.
• A brown sugar saver – to keep your brown sugar soft.
