What are the statistics and records on the popularity of keto diets according to Carolyn Scott?

One of my articles cites Statista data showing about a 3% increase in American consumers following a keto diet between 2018 and 2019. I also note that the numbers are “probably higher now,” highlighting how rapidly keto has grown in popularity in the U.S.

I do not currently publish a running set of formal “Carolyn Scott” keto statistics beyond that cited increase and general discussion of keto’s rising trend.
