Hi, I’m Hilary Erickson from The Pregnancy Nurse. Here’s exactly how I make my super easy Bruschetta Chicken.

  1. Start with chicken breasts or tenders in a casserole dish; salt and pepper both sides. You can pre-bake a bit, but you don’t have to.
  2. In a bowl, mix quartered grape tomatoes, olive oil, lots of minced garlic, dried basil, oregano, and salt (be generous, especially if using fresh mozzarella).
  3. Spoon the tomato mixture over the raw (or partially cooked) chicken.
  4. Top with sliced fresh mozzarella (I buy the pre-sliced log from Costco).
  5. Bake at 350–400°F until the chicken is cooked through (165°F in the thickest part) and the cheese is melted and bubbly.

I like to serve it over rice, pasta, or greens and spoon the extra tomato “sauce” over the top.

Would you like a simplified printable-style version or ideas to prep this ahead for a busy night?
